
Quinoa & Black Bean Salad
This fresh salad features Margaret Holmes Seasoned Black Beans, red onion, cucumber, bell pepper, Italian dressing, lemon juice and parsley.
Ingredients
- 1-1/2 cups cooked quinoa*
- 1 15 oz. can Margaret Holmes Seasoned Black Beans; drained
- 1/3 cup chopped red onion
- 1/3 cup chopped cucumber
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped yellow bell pepper
- 1/3 cup plus 2 tbs. bottled Italian dressing
- 1 tsp. fresh lemon juice
- 3 tbs. freshly chopped parsley
Instructions
- Stir together all ingredients and chill 30 minutes prior to serving.
