Ingredients

  • 1-1/2 cups cooked quinoa*
  • 1 15 oz. can Margaret Holmes Seasoned Black Beans; drained
  • 1/3 cup chopped red onion
  • 1/3 cup chopped cucumber
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped yellow bell pepper
  • 1/3 cup plus 2 tbs. bottled Italian dressing
  • 1 tsp. fresh lemon juice
  • 3 tbs. freshly chopped parsley

Instructions

  • Stir together all ingredients and chill 30 minutes prior to serving.
