
Butter Bean Frittata
This frittata is one you will have to try. So smooth and delicious.
Ingredients
- 2 teaspoons butter
- 1/3 cup chopped red onion
- 8 large eggs; slightly beaten
- 1/3 cup grated Asiago or Parmesan cheese
- 1/3 cup chopped red onion
- 1/4 cup heavy cream
- 2 tablespoons freshly chopped parsley
- 2 tablespoons flour
- 1 teaspoon Dijion-style mustard
- 1 15 oz can Margaret Holmes Seasoned Butter Beans- (do not drain)
Instructions
- Melt butter in a 6” cast iron skillet and add onions; saute for 2 minutes.
- Stir remaining ingredients together in a medium bowl and pour over the onions.
- Cover and cook on low heat for 8-10 minutes until set.
- Slide frittata onto a wooden board and slice into 4 pieces.
- Serve with a fresh salad and crusty bread.
