Butter Bean Frittata

Ingredients

  • 2 teaspoons butter
  • 1/3 cup chopped red onion
  • 8 large eggs; slightly beaten
  • 1/3 cup grated Asiago or Parmesan cheese
  • 1/3 cup chopped red onion
  • 1/4 cup heavy cream
  • 2 tablespoons freshly chopped parsley
  • 2 tablespoons flour
  • 1 teaspoon Dijion-style mustard
  • 1 15 oz can Margaret Holmes Seasoned Butter Beans- (do not drain)

Instructions

  • Melt butter in a 6” cast iron skillet and add onions; saute for 2 minutes.
  • Stir remaining ingredients together in a medium bowl and pour over the onions.
  • Cover and cook on low heat for 8-10 minutes until set.
  • Slide frittata onto a wooden board and slice into 4 pieces.
  • Serve with a fresh salad and crusty bread.
