
Blackeye Peas and Mango Salsa
An easy and delicious summer salsa recipe featuring Margaret Holmes Blackeye Peas.
Ingredients
- 2 15 oz. cans Margaret Holmes Blackeye Peas, drained
- 3 tomatoes diced
- 2 mangos diced
- 3 green onions sliced
- 1/2 cup vegetable oil
- 1/4 cup white vinegar
- 1 tbs. lime juice
- 2 tsp. ground cumin
- 1 tsp. garlic powder
- salt and pepper to taste
Instructions
- Combine all of the ingredients in a large mixing bowl, and refrigerate.
- For best results, refrigerate 4 hours.
